Polygon density and map resolution for an AAA Game creature

Hi friends!

I need some help, I want to make a creature and would like to achieve the Evolve / Gears of war creature result.

The problem is that  I'm mainly a commercial / movie artist so I don't know perfectly the game restriction and pipeline.

My idea was to model in zbrush then retopo, texture in substance and render in.... dunno  at the moment.

The questions are:

° Do you know how much is usually the resolution for such a creature? both in polygon density and texture resolution? I can't find anywhere lowpolys or textures to have an idea.

° What software do you recommend for the real time rendering?

° Do you know some tutorial that covers this kind of pipeline?
