Adding More geometry

How do increase the faces in Maya? I know from my class mates we are gonna have to make models with 100,000 faces on them.
The only way I know how is to add edge loops.
I ask because I will be taking my second modeling class in spring and the modeling professor sucks. He teaches in nurbs more than polygons (had him last semester). Not to mention no one understands him and he is literally the only guy who teaches 3D modeling.
So I'd like to use this semester to teach myself as much on modeling as I can.

You're doing smooth mesh modeling right when your model looks good when you press 3, while being easy to edit when you press 1.
Controlling the shape when smoothing geometry is an art of its own, and there's even a dedicated thread here in Technical Talk.
