Why have I never seen that "show edge distortion?"
Not 100% sure what the benefit of a shaded UV is but... I know I have also seen an option to change the style of that red grid when you select it. Don't remember where though.
If that is not what is bothering you, you could always use TexTools to swap the XYZ with the UVW and then edit within the max viewport in "X-ray Mode."
Kind of an extreme work around but if you really need to see it that way it can be done! lol
