As for your environment stuff, it's looking pretty plain. That could just be the fog or the lighting. I'd say your next step is to try and model some more complex objects; that will separate you from the competition. Find an interesting concept you like and go from there, or maybe make your own. I think what you really need is a WOW piece. Something the average person will look at and react by soiling themselves. Something epic, complex, modular and impressive.

That is one thing I did realize after I finished my last project, that there is no really complex objects even though I know I'm very capable of making some. I'm definitely going for the WOW factor this time. My plan was to work off of a concept this time to show I can do that, so that website is perfect!
Do you think I should make complex objects for my current scene or move on and just show that I'm constantly improving through new projects?

Remember, don't be afraid to challenge yourself. If an employer looked at your website, that first image there is what they would see. And all that's in it are cylinders and rectangles.
To warm yourself up on something big, you could start off with a lot of small complex props.
I don't see any zBrush in your environments, so if you did something along the lines of this:
Then you could do some fancy ornate stuff in zbrush.
