Im attempting my first hard surface model currently, correct me if im mistaken but im supposed to crate the low poly, save that out, high poly model, make the uvs and then bake the normals and then transfer the normals to the low poly?
I appreciate it, I just want to save myself heartache later.

i tend to start off with what i call a medium poly, which is more or less me modeling the basic shapes with out worrying about optimization at all.
than i will copy that twice the first copy i will add my supporting edge loops and additional detail, and my 2nd copy i will optimize and UV for use as my lowpoly.
also with the highpoly, dont worry about keeping it all quads and tris, or as 1 object, when it comes to highpolys you can do anything, even bash meshes together, and as long as it smooths fine when subdivided, and looks fine, it will work.
