I think you should connect it to some material effect where you have all the roots with UVs laid out from top to bottom and have a scrolling texture or alpha to make it visible over time. Couple that with the scaling and it should look a lot better I think.
I love how she is disregarding all the crits ppl are making here I'm sure she is just trying to mess up our minds (subliminally) with these videos. Creepy.

Try to grow the grow along a spline and let them get get thicker-individually over time, not as a clump as you are doing now.
Extrude along spline...
Path Deform + Scale...
Vertex animation...
World space modifiers...
Ivy Generator...
RayFire...
Thinking Particles...
Grow1...
Grow2...
This is what you need to do, NOT scale. But I can see this might be a worthless post...
