Kind of doubtful you'll find anything in that Eat3D video, as it's from 2010, before they added that stuff I think.
Did you read up the stuff on UDN already? That should be the first place you check for any UDK info really. http://udn.epicgames.com/Three/ScreenSpaceSubsurfaceScattering.html for example explains it fairly clearly.
