So Much Trouble w/ Modeling - HALP!

Before you assume anything, know that I have knowledge of the software. Maya is the first ever program I have used, starting with Maya 4 PLE which came with UT2K3, and recently took classes for both Maya 2010 (it was more of animation basics + a studio-style class where the entire class worked on a short film for an entire semester).

I've been having so much problems starting a project. I've done simple stuff like handguns and simple props, but that was years ago when poly counts weren't heading into 10k (which is standard 1P models for UDK/UE3). Now I'm just lost in everything. I know how to start it (the infamous subdivided cube to be mirrored after stuff is done), but not even midway through the entire model, the defecation hits the oscillation.

Just today, I wanted to start on the Skorpion EVO 3 and Micro Uzi. You'd think "Hey the Micro Uzi is just a T!" I thought it'd be easy to model, but Maya trolled me hard by making duplicate vertices. I had no idea where they were coming from. Also, they like to leave faces that Maya thinks is an edge, but it looks like a hanging edge connected to vertices but has no face. It got so bad, I couldn't bevel ANYTHING, not the entire model, not a single edge, etc.

I learn by example and visuals, so detailed tutorials are a must. What I'm looking for is advice, tutorial links specific to hard surface modeling/weapon modeling, etc. I've probably seen quite a bit of tutorials, but I've probably seen just a few that are really detailed.
