Is it possible to edit seams after the flattening command in 3dsmax?
I mean, delete a green edge, add another seam, etc...
Or do I have to do it via stitch?
In Blender I used to edit seams on the fly, even after pelting. It was so fast.
I'm still confused on how to achieve a similar workflow (if that is possible) in Max.

I never used Blender, so I wouldn't know how a program can unwrap 'on the fly', but I tend to use point to point seams (the blue line) and then run this script: http://www.scriptspot.com/3ds-max/scripts/unwrella-2-helper-blue-edge-selection-to-green-seams
It gets me right where I want to be with a relax runs later.

It also sounds like you're looking for something like the new Peel tool in 3dsmax 2012? Peel has replaced my old workflow I outlined above. It behaves quite a bit like blender from what I hear, relaxing on the fly as you define seams and break pieces off. selecting an edge and breaking it, is great for "releasing tension" in pieces so they can relax properly.
