A good way to start is to focus on each part at a time as well. So uv the arms, legs parts of the body seperately then put it all together after you have the shapes.
Depends on the app you're using. If its max2012, probably explode by smoothing groups and then stitch and rearrange, or a lot of select by planar angle and quick planar button. Or Planar map the whole thing, select the edges you want to be seams, break and arrange.
I agree that working on it in pieces is a good idea, in max you can group the pieces so they're easier to grab and move around and easier to arrange.
Whatever way you go, try to keep a consistent textel density and remember to leave lots of padding between your pieces. It helps to know what resolution your map will be and then display a pixel grid, it doesn't need to be a 1px grid but just so that you roughly know how much detail will be on each piece so you don't unwrap a bunch of tiny pieces to one pixel each.
