Environment Modeling - Buildings

Hey there, I am a graduating senior at a 4 year university majoring in Digital Arts and I am running into some problems with my thesis. I am making a video game some other students using the UDK engine and I am having the HARDEST time with buildings. Anything and everything about them.

So if anyone could answer some questions it would be more than helpful. You would save my life and that of the closest kitten I will massacre if I can't figure this out! Thanks!

1. When modelling buildings that are quite big, should i use a modular approach?

2. For buildings that will have interiors, should i model the shell then build a bsp interior in UDK
2.2 Should i model the exterior then the interior separately?
2.3 Should I model the exterior and then extrude inwards to create an interior? (1 object)

How would one go about modelling this?

UV mapping -

When mapping modular pieces should most likely be able to use 1 uv set in the 0-1 plane or should i be using multiple uv sets?

What is the process to successfully uv-map a building and bring it into unreal?

1. Model
2. Unwrap
3. Export uv snapshot
4. Create diffuse
5. Create normal
6. Create spec
7. Import textures and model into UDK and assemble material/apply

??
