A couple of issues with normal mapping

Hi, I'm new and i have been browsing these forums mostly because of BRAWL.
I've looked around the internet, and I have also looked through the normal map sticky thread, but I am just so very uncertain. Most tutorials I've found mostly deal with simple geometry.

I'm still very new to 3d modelling and I am currently trying to learn how to make a normal map. I've probably gone for a bigger mouthful than I can chew, but I am currently trying to make this

The character I am making is supposed to go into Unity sometime. I've reworked her a couple of times from scratch, so it'll probably happen again. The sticky mentions that it is better to fix the mesh, than having to tweak cages and touch up in photoshop, so I don't mind having to change(drastically) things around.

That is why I would like to ask:
-How does one go about baking a normal map for a model with a single mesh, but with multiple materials? I have two versions of the character, one with a single UV map and one with two.

-Should I not be using meshsmooth to make the highpoly version?

-In general, what am I doing wrong here?
