Creating/Rigging Racer Models

I'm working on a project for a game design class that involves creating a 3D Racer in the concept of something similar to ModNation and/or Mario Kart, but I'm also stuck doing the rigging for animations (something I usually don't do). Is there any way I should model these racers (the character's top half will only be seen) so that the animations are easier to perform? Our plan is to import the models into Unity 3 and set everything up from there.

If anyone can help, I'd greatly appreciate it. I can post some of the concept sketches if I need to clarify too. Thanks a bunch!
