I am starting to do low poly modeling , I have never really done modeling before but I am an artist. I am trying to model a bird using a reference image.

Now what I know is I create a box with 1 segment for (width, height, etc) and begin to drag the vertexes to form a rough outline of the bird. So I started with the head.
Now how do I create a vertex in the middle of the edge?
I want to model the beak, but I don't want to have a single poly for half the beak. I was looking at a low poly modeling tutorial and it said to connect them, but that made no sense what he was doing and he didn't explain it very well.
Is there a good low poly tutorial that explains how to do this and use the extrude tool properly?

Yes there are good tutorials on cglearning website for this.

You use the cut, Or connect tool: Works with 2 vertecies selected and clicking connect. Than you will have to extrude and tweek the 2 faces you have made after that.

This website have pretty much everything from high to low poly modeling tutorial(s) and also you should look in to 3ds max 2010 tutorials from the menu.

click on 3d Basix on the right if you need something more. But i think this tutorial will teach you pretty much everything you need to know about polygonal modeling tools.
