Nah, I've had a project in mind for a while now, and haven't been able to find any good schematics for classic ships really. There are however, lots of pictures & shit that you can infer from. I think that the fact that every ship was hand built, and pretty much different from the last is helpful in modeling them, as you can justify a lot of changes you make.
I'm pretty sure the San Diego Harbor houses some pirate ships. A few are used as tour boats, while others are used as restaurants and museums. Maybe start there? Sorry if this doesn't help.
Your best bet is probably looking for sites about making model ships. Doing a quick google search for "model ship plans" yields loads of results. You might have to dig to find some that don't want you to pay, but even the example images might be sufficient for a reference for CG.
Best thing to do is go see some for yourself. The best reference you can get is the one you take yourself. Next best thing is getting a model. I'd recommend not getting one you have to assemble yourself; model kits are fun usually, but those ships are the ultimate test in patience...

golden hind is an ACTUAL "pirate" ship, captained by sir francis drake, a privateer in the royal navy.
