quick question:

how do we change the color of polygroups in zbrush? Many thanks in advance everybody.

Just make that polygroup the only one visible and press the group visible button, each time you do the colour will change.

Can this be changed to a specific color? The colors they have conflict with my reference drawings... I'd like to make it white. Thanks

I don't think there's a way to designate colors to polygroups, but you can adjust the amount of color fill that happens.

Preferences > Draw > PFill. Reducing PFill to 0 will display just the wireframe (but will still chug a bit compared to working with polyframes off). There are also opacity and wireframe color settings in the Preferences > Draw menu.

If its just the color white that you want, you might be able to use the Group as Dynamesh Subtractive button (just don't dynamesh it in that state).
