I'm currently working on my Head Mesh. What i got is the Basemesh and UVs on it.
So my Question is:
What to do next?
i think making the HighPoly is he next step. And then make a Displacement Map on it. And the apply where? On the Basemesh or on the resulting mesh woth lowest SubD? And will i have to make new UVs?
How to start best Texturing then.
These are some Questions that are stopping me from doing the High Poly right now.

Worry about the low-poly and uvs after the high-poly looks how you want it to.
