For your example this is what I would do
(1) Select and right click on low poly model, then select Object Properties, and tick off See-Through.
or (2) to the right of See-Through, theres visibility and you could drop that down to 0.0 or adjust it to what you like, give you more control and its more transparent
EDIT: Also you can right click on High poly model, select Freeze selection cus it can be annoying when you accidentally select the high poly model. If you didnt know that!
You can create a new Layer for the High and set that Layer to any shading mode, you want. I do that for example for reference image planes, to have them shaded even when I am working in wireframe mode.
