When I smooth faces to make say a rectangle smoother, it goes from 90* degrees hard edges to like sphere smooth and looks horrible, it oversmooths to the extreme. I was wondering if there was an option to control how much it smooths so I could just round out the corners a bit??

There are a few drawbacks to this function -- when adding loops to your object the tool tends to forget what edges are smoothed and which are not. It also has some problems interpolating new cuts in an object. Even tho it creates cleaner geo and less of it I would steer away from this tool unless you are absolutely sure you do not need to cut your objects any further.
In this case it's the Continuity value you wanna play around with to tweak how much you want it to "smooth" the 90 degree angle you are speaking of. You can alter this after applying the smooth given that you have construction history enabled. Just click the Smooth history node in the channel box (?), right below where you find all the translate, rotate, scale, etc. values.
