something about the japanese rhythm games are ridiculously fun.. and the fact that you can pick them up without knowing japanese at all and still be able to play says something about the simplicity and fun factor of it.
Peggle is definitely number one for me. I also love me some Audiosurf.
Back in the day I was a huge fan of Welltris, the top down Tetris game. If you can consider that casual, though I don't know if audiosurf really is either.
I love pixel jam they are rad dudes!... I love the music in rat maze. Its simple as all hell but its fun. RATMAZE. There are some jazzy games on kongegate too. I like super stacker.
Plants vs zombies is better than ANY other casual game, and a huge amount of hardcore games. I got it the second I saw it on Steam a few weeks ago, and still play it everyday. The sheer value you get with that $20 game is incredible. Puzzles, Mini games, on top of the regular campaign, it just can't be beat.
Some time ago I played a game called Guru Logic Champ, that was an awesome game though it's very rare nowadays, so I still couldn't find a copy for my Gameboy micro. This review includes a PC demo of the game:

Man, Puzzle Quest is not casual. I spent 6 hours last night trying to 'research' spells off of some trolls and orcs I captured. Didn't even get one spell. 5 am, I couldn't make out the shapes of jewels, just little dots of color.

i'm absolutely in love with the touhou game series. i just recently beat th8 extra stage during a rotoscoping break in the middle of the night :P

egads, "bullet hell" shmups are the hardest of the hardcore, it is the exact opposite of casual!
My buddy watched me play those and he's like "My brain just fucking melted!! How do you dodge those!!". It can be relaxing to play because you get into this zone and can't hear anything around you.
