What is the best way to create the ornate gold trim around the various armor pieces? Should I model it in Maya when I'm making the base mesh, so the trim is a second mesh sitting over the base armor mesh? Or should I create it Mudbox, using a stencil for the trim design? Thanks!

Then you can export it all to Mudbox and do a pass over it to add scratches, dents and variation by sculpting.
I'm sure other people have other preferences for workflow though, that's just how I'd do it.
