I have made an SDK of my Bunny that is included in the UT3 Rodents Faction: http://boards.polycount.net/showthread.php?t=53379
Putting your skin in UT3 can be done very quick and quiet easy. The zip contains a upk. package and ini code that is already configured. You only need to replace the textures with your textures and then you can already test it in game.
I also put a short documentation in the zip that should give you all the info you need and if not you can also ask here.
