Usually a non compete clause just limits you from starting your own business in the same industry or sometimes working within a certain amount of miles in the same industry. Even plenty of small businesses do it. A computer repair shop I applied for a long time ago in high school made me sign one.
They are generally not something to get to worried about. I'm guessing you're not taking a position of exceptionally high level or something like that and thus companies usually don't follow up on what folks do after they leave as they're usually not going off and starting their own companies and such.
You have every right to declare any projects, IPs etc that you may have before signing and they will remain yours. These non competes are just a way for most companies to cover their ass should someone decide to steal tech and run. it's a fairly standard practice.
All the same, make sure to read over every word of your contract so there isn't anything too shady in there.
