The highpoly model looks very nice indeed! Makes me want to start learning zbrush. My only concern though is if the legs well bend nicely when animated.
hey its a great job! well done but i'd reconsider the position of the saddle... it should be more to the front if you ask me (this is how boarriders look in warhammer)

Jimmies: Mudbox actually makes it really simple. Just make your low poly in max and UV map it, then export as .OBJ and open it in MB to start painting. Once you have your highpoly as you like it, go into the Tools menu and open "Texture Bake". Set target at lvl0 and source as your highest lvl. The rest is just doodling around with the settings.
Once you get the map, you apply it to the bump map\normalbump channel in Max. If you want to see it in your viewport, you need to check the DX render box at the bottom of your material's options.
