Okay, for whatever reason every time I hit Ctrl + n to make a new image it always defaults to greyscale and I have to go in and change it, how does photoshop set this crapness and how can I change it back to rgb by default. Any magic?
It should always use the last setting you used. If you set it to RGB in the ctrl+n pop-up window and it's still defaulting back to greyscale each time, I'm not sure. It should always use the previous setting.

It could also be that you have a grayscale image in the clipboard.
