Foliage and face mapping? I am stumped...

I am an amateur 3d game modeler who uses 3ds max 8, I have no serious training (I have taught myself mainly using stuff on the internet), And I have 2 simple questions

1. How would one go about modelling a low poly face that still looks good.

2. This is more for personal curiosity than anything else: how was this done:

I would guess spritesm and serious abuse of the alpha channel.
