Hey hey,
I'm looking for books on lighting theories*, environment modelling (highres/next gen if possible) practices, texturing, etc. I use Max execlusively (atm) and am interested in current-to-next gen. tech.
*Game related if possible. "How to light your models", etc.

I've never seen any books on high res environment modelling. Have you searched Amazon?
IF its "how to light a set/scene" maybe this one though I don't have it myself so I can't tell you its quality.

I love that book. It will help with the theories, though it sounds like you will have to buy other books for that other information.
As for the theory/practice on lighting, the best teacher for me has always been the surroundings around me. Wherever I am, whatever I do, I just naturally notice things that most people find boring. Shadows, textures (surfaces), highlights, etc. and how all this stuff interacts.
Another great way to learn about lighting (or anything) is to look at the work of the best in the field. Look, absorb and learn.
I do both all the time.
I'll look in to the recommended books.
