Er, which seams? On the bottom of the foot? The side? At the ankle? At the wrist?
A little more explanation wouldn't hurt...
It really depends on what sort of hands and feet you're doing (although in your case I can safely assume you mean low-to-mid poly gargoyle hands and feet...).
Sorry to be brief, but just put the seam where it's least likely to be noticed. The inside edge of the foot, next to the sole, is usually a good place for a foot seam. The side of the hand with the pinky on, nearside to the palm, is where I usually put the hand seam. It's the place that it'll be least noticed, and easiest to paint across, in my experience.
EQ: Why not weld the seam along the side of the pinky finger and palm, and make it all one chunk? It's not like it'll add huge amounts of distortion, and it'll eliminate a fairly large seam.
pretend they're flippers and map them top/bottom with the 2 UV chunks stitched at the outside of the pinky. thats how i like to do it, that way you only have one major seam to deal with
Cheapy wins the award for LSCM abuse. Hell, compare your finger sizes on the model and the UV map, hands don't work well with LSCM and you need additional tweaking there.

i've seen a few people cut the fingers off and map them individually too.
