How do I create character textures like this?

How would I got about texturing low poly models like this?: 

Everything in one diffuse map, so no PBR workflow.

Can someone give a list of topics/concepts/techniques I need to learn in order to create detailed textures like this for low poly characters?

Also what software would make the most sense for this task.

I already have modelled a low poly character so my current task is to texture it.

    Hi! A most simple option would be to make a readable UV layout, then collage/paint the texture on top of the UV layout in an image editing software (Photoshop, Affinity Photo, Krita, Gimp, ...), while frequently checking it on the 3d model.

    Of course you can also project images from view or paint directly on the model. In which application did you create the model? I believe most modeling applications have at least some rudimentary way of texture painting.

    Lots of ways to get to the result. Maybe check out the resources in the wiki and just watch some workflow videos of different artist to hear about their thought process.
