Need help with character creation

Hello guys so im a blender user ( intermediate level i could say) im familiar with the program and i want to create "epic" western scenes into 3d more like backgrounds and etc ( it worked few times) however i always get stuck when i want to add characters ior animals i cant find a proper tutorial on it , should i try DAZ3D or i need to learn to sculpt? i want to be able to create characters and scenes like this for example..however in every scene there is character i cant make it ( i dont need the face details just the character as character overall (clothes and etc).

Creating a whole character is a difficult and complex thing.

any in depth tutorial // course that can help me understand the process of it coz im kinda lost even when i read these answers :D i have 0 idea about characters creation , thanks i only did few sculpts and thats it
