Hi, I'm wondering what the issue is here and how I could fix it? I extruded the faces with the white coloration, when I delete and fill, and continue to do the same to the rest, it seems to reoccur or just stay the same.

You should make a better topic title. "Fixed" sounds like you asked a question, but then solved it yourself.

About the white surfaces, did you check for overlapping meshes? Also check the vertex normals (also called Smoothing in some softwares).
Which software are you using? Another good thing to put in the topic title.
