how do I manipulate bevel without touching any parameter bar?

It looks like the author of the video only captured the 3ds Max Main Window, thus you can't see him manipulating the values in the caddy UI.

But you can get the behaviour you are asking non the less, though with less control over the outcome.

Instead of clicking the tiny button as shown in the video, click the button with the name of the operation and modify it by moving the mouse over your selection and then left-click drag to edit it.
