Novice in Need of Direction

I'm new to CG and grasped an overview for the 3D production pipeline for games
Layout in Maya(maybe skip this), ZBrush for high poly detailing, Maya for low poly, Substance Painter for texturing, and Unreal for rendering
I didn't include stuff for animation because I want to focus on character or/and environment design
I also have a background in 2D illustration 

I'm having a hard time finding tutorials that teach a multiple software pipeline for games
There's is also a lot of sites that use the outdated version of a software 
Do I find tutorials that teach one software as well, and maybe I will be able to put everything together?

If anyone has recommendations for learning resources, it would be greatly appreciated 
Currently I'm doing research to find the learning resources to be self taught
