I said this over on twitter as well but don't do a likeness. This will throw you off. You will focus too much on the likeness and not enough on the anatomy. Also, don't start with an older man like in this case. There's tons of nuance on what happens to anatomy once you age and you are not ready for that IMO. Start with a fairly generic, adult male head. That will be the best starting point for learning proper foundation in facial anatomy.

The advantage of using a celeb is the amount of ref material. But the best is movie ref. If you choose a film star, place a movie player under zB and make the interface transparent and pause the player at various angles. Then try and match different viewpoint shots with your sculpt on top of the frame.
just to throw in my two cents, You could go to 3dscanstore and grab turn around images of scanned heads there, reference doesn´t get much better than that. good luck!
