[Blender] How to "flip edges between quads?"

Hello, 

I found this instruction on topology with pictures attached to it. I have been following the steps pretty clearly but they lost me on this step. First it says to 
"select and extrude 10 faces to capture the trapezius muscle." That was easy enough.


Next step is what loses me. They say "to improve edge flow, flip edges between quads and/or redraw edges as necessary (as highlighted on the back of the shoulder in this step)" And I... guess I'm not familiar with that technique? This is the next step he achieves in the process. 
And basically, I'm lost as to how to transition from the top photo to the bottom. I've tried it a couple ways but I can't seem to get the same result. Any guidance would be much appreciated.
