Would human/animal statues fall under the role of environment or character artists?

 As the title says. It's a static environment object, but it'd still require anatomy knowledge that environment artists don't specialize in.

    Depends on the Studio. If there are Environment Artists in the Team that are able todo that task. 
    And/Or if a Character artist is available. Could also be a Task where the Env artits doe get feedback from the Character Team.
    With good Feedback and help every Senior Artist should be able todo that task. Its just a matter of time.

    usually character artists in my experience but the real answer in most cases these days is: outsourcing. stand alone assets like statues that don't have an impact on gameplay are almost all outsourced these days at medium-large studios. 

    most statues I have seen built in house it is usually the result of the character team taking existing assets and posing them/bashing them into statues, kinda hacky but it works in most cases.
