The multi map exporter plugin that comes with zbrush can bake multiple subtools into a single texture
yes but how?
Get the GoZ scaling and position set up between zB and your main 3d app. Put the highpoly in its top subdivide and make a copy/duplicate. Decimate the copy and send it to your 3d app. Make a retopoed low/er poly version of the high poly using the decimated version as a base. Uv the lowpoly and send it back to zBrush. Using the highpoly and uved lowpoly version create displacement maps in zB (not too hard check the web).

If you need to bake multiple meshes onto one i would do that with mudbox. Its still the best displacement baker.
I assume thoose stitches are to small. You will need a big texture to store that small details.
