[Newbie Question] Tessellation not available?

I'm trying to mess with tessellation since mid way while trying follow the guide  that the artist used tessellation, and I realize I don't have the option in the definitions tabs in the 3d view.

I also noticed when I opened the file the AO map was missing, where as the person in the video already had it.
Would love to know what I'm doing wrong.

For iray renderer this setting should be under Scene > Edit panel.
