in Blender, if I zoom in, while sculpting, it adds extra polys, while in Zbrush it doesnt add any new topology, so these ridges im trying to add, so far, look really ugly. what do I need to do?

subdivide the model.
or use sculptris pro which subdivides only the brush radius, increasing resolution with decreasing radius.
at some point you'll want to learn about dynamesh as well. and dynamic subdivision may be useful to know about too.
zbrush works different from other 3d apps. I'd recommend following some intro to zbrush tutorials first to avoid excessive frustrations.
