I've always avoided booleans cause they always make a mess of what Im trying to do.

so far, using the sub surf, I've made a nice shape, however I need to have a nook taken out of it, highlighed above for an area where the tap would be in real life.
do you apply the boolean before the sub surf, or while the sub surf is there, or after applying the sub surf?
so I made a cuboid shape, put it in the right place place, apply the sub surf, then I apply the boolean, difference, and yeah, im not sure if its good for bad, I saw a hardsurf tutorial the other day, with that Oleg guy and he was like 'lets not worry about n-gons too much' so im just as confused as I was 6 years ago when I first started this!
so now it has lots of n-gons?!? any advice?
(its going to be very high poly but I will retopgraphy it later.)

Using booleans could be ok, if you're ok with having sharp non-beveled edges on the cut portions of the mesh.
Doing this entirely with the proper subdivision surface is another option, you'd have to add proper loops to make it work.
You could also have a relatively simple base geometry, cut different shapes into it and use the bevel modifier like in this image.
