Corrupted textures upon opening a project

I've had this a few times in the past and sometimes it's been fixed by changing the normal from DirectX to OpenGL and vice versa, other times by rebaking and sometimes not at all! 

As far as repro steps go, it was fine this morning and then as soon as I opened it this afternoon, that's how it looked once it had finished loading.

Is there a definitive cause and solution for this? It's starting to drive me crazy
