How do you approach open world, organic world building?

Hey all,
 

I hope you are doing well. I am interested in getting your views on open world building, Most environments I have created are hard surface, interiors. I really would like to start creating wide, open, organic environments (prefereably in UE4). I would like to have an insight into what is your workflow and what stages do you go through as I imagine it will be slightly different than interiors. I can't wait to see your work! If you have any interesting tutorials regarding exterior organic world modelling I would really appreciate if you could share them.
