Can someone tell me why the middle of my mesh looks like the verts have been stretched out of shape

Because you're subdividing weird shaped quads and you have uneven distribution of edges.

If it looks right with wire frame turned off you can ignore it, if not then explain what shape its supposed to be and someone will be able to help with the topology

It's suppose to be a circle , but I think i fixed it, just deleted the mesh and started again
