Having first learnt the programming side of game design, I am trying my hand at creating my own art for the game as well.
This is my first character model which I created in Blender using modelling only (not sculpted). The video also shows the model animated in Unity.

I was thinking for the next model to try and use some hard edges to create details/accessories.

By 'communicated surface quality', is that saying the model shows no indication of texture/detail? Therefore, no assertion of material ie. Skin/cloth
2) Not necessarily detail. There's ways for flat skin to read as skin with shader elements like Subsurface Scattering.
Do you know whether a model such as the below requires sculpting or is it just detailed with a bit of painting?
