It has been a while since I used Max and somehow I cannot seem to fill a triangle or an Ngon. I know there is the "Gap" modifier but this is not what I am looking for. Any help appreciated

Editable Poly > Border sub-object > select the hole > Cap button (in the Editable Poly modifier).

You can also:
Editable Poly > Edge mode > Select edges> Bridge
Which will let you create edges between the boarders and control the, twist, taper, bias and smoothing

Editable Poly > Poly mode > Create
Click on verts to create a poly between them, click all of the verts around a hole to fill it.
Ribbon Modeling tools > Modeling tab > Polygons > Bridge

Border Fill is very useful for capping holes.
