I am new to Character Modeling. After doing research I came to know that Zbrush and Graphic tablet is the way it should be. I have chosen Wacom Intuos Pro for this. I have also downloaded some tutorials on male and female body-form Sculpting.

But from job point of view, where speed is required, I would like to know how much time should each part take to complete. for eg. Blocking, Sculpting, Retopologizing, Map Extraction, Texturing ? or in terms of time for a whole Character in total.

I know that it depends when it comes to characters with clothes and accessories, but on average, how much time it should take ?

I've seen characters take upwards of 6 months to complete.
I've also seen them done in 3 days

While you're learning just make them good,  the more you do, the faster you'll get.

In my experience the part of an art pipeline that causes the biggest bottleneck is art direction and concept so someone taking a day or two extra on a face isn't going to make a sod of difference ;)

If you take a look in the Polycount wiki there is information similar to what poopipe wrote. Just keep modelling and watch the web for techniques that will aid your speed.
