If anyone could tell me if I've got the right idea of the workflow for creating character art, that'd be hugely helpful because I'm not very experienced and have never done this properly.
I'm sculpting a sort of basic figure with dynamesh, which I'm going to retopo, model the hands and attach them, then model/sculpt clothing, combine it all in the scene, delete invisible parts, unwrap everything, and then go back into Zbrush to sculpt higher details. Is there something I'm missing or don't understand about the workflow?
Anyway, for anatomy critique:

I'm curious why not model the hands at this stage in Dynamesh also?
I'm following your project because I also need to learn good workflow, so I hope you get some good feedback
Sorry I can't give advice on workflow, but i'm sure you'll get some great feedback soon!
A good start
About the hands -- I tried modeling the hands in dynamesh, but when I redynamesh it the fingers end up clumped together. I tried scaling the hand larger but the transpose tool was behaving crazily, and frankly that thing was pissing me the fuck off. Also tried sculpting them separately out of a sphere, which I planned to fuse with the dynamesh. Then I thought maybe I'll just model those later and started working on other areas again, so I have yet to go back to the hands, but I probably will try sculpting them again. Anyway, a lot of rambling there. Thanks for the feedback!
