Every kitbash pack I've ever found has always been 100% highpoly, and I'm curious why that would be.
I mean if it was meant for VFX, that's one thing. But are none of these aimed at game artists, or am I missing something?
Adding on some bevels/chamfers and subdividing is a hell of a lot easier than retopologizing and UV mapping a hard surface asset.
I'm considering making a lowpoly kitbash pack myself to fill this void. But if I am missing something big here, I'd like to know if it would be a waste of time.

it fits my workflow so I can see the use for it, might not fit everyone though.

I haven't used other peoples kit-bashing collections so far, but if I was looking, I would strongly prefer low poly versions along with the high poly, with nice UVs on the low poly, and if they are sort of mid-poly, edge-loops that are set up such that it's easy to delete a few to get a lower poly version that still works great.
If you are a hard surface artist, taking the time to make 2-3 models will provide you with some nice kit-bashing meshes!
I am only making a steampunk unicycle and i have already made more than 20 objects i can totally reuse forever
