3D modelling plaster of paris?

Hey guys, So i'm making a 3D model out of Foam board, I'm really into the architectural kinda stuff and love working with it, Is plaster of paris the right way forward as to giving the foam board more life? to me it seems really awful to work with, as you can see from the images, i tried using a polymer clay as well but that was just as bad! I've also tried using an air dry clay, i love sculpting with it but it cracks and shrinks something rotten! any advice and pointing me in the right direction would be muuuch appreciated! thank you kindly!
