Each time I set my UV to tri planar in Substance painter I get this problem below. However, If I set it to UV projection works good, but I don't want to use UV projection mode because it doesn't cover the entire sphere perfectly, any help would be much appreciated

Thats what tri planar projection does . . .it takes 3 sides (x,y,z axis) and projects therefrom on to the model (simplified). In the area you talked about the top and down projection "intersects" or fades into eachother. You cant really avoid that.

For the UV Projection to work you would need good UV maps on your geo.
I fixed my UV maps to become really neat and clean without any distortion and I set it inside SP to UV projection instead of UV planar projection and modified it.
